BUTTERY SOFT PRETZELS



Ingredients

* 4 teaspoons active dry yeast
* 1 teaspoon white sugar
* 1 1/4 cups warm water (110 degrees F/45 degrees C)
* 5 cups all-purpose flour
* 1/2 cup white sugar
* 1 1/2 teaspoons salt
* 1 tablespoon vegetable oil
*
* 1/2 cup baking soda
* 4 cups hot water
* 1/4 cup kosher salt, for topping

Directions

In a small bowl, dissolve yeast and 1 teaspoon sugar in warm water. Let stand until creamy, about 10 minutes. In a large bowl, mix together flour, 1/2 cup sugar, and salt. Make a well in the center; add the oil and yeast mixture. Mix and form into a dough. If the mixture is dry, add one or two tablespoons of water. Knead the dough until smooth, about 7 to 8 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with plastic wrap and let rise in a warm place until doubled in size, about 1 hour. Preheat oven to 450 degrees F (230 degrees C). In a large bowl, dissolve baking soda in hot water. When risen, turn dough out onto a lightly floured surface and divide into 12 equal pieces. Roll each piece into a rope and twist into a pretzel shape. Once all of the dough is all shaped, dip each pretzel into the baking soda solution and place on a greased baking sheet. Sprinkle with kosher salt. Bake in preheated oven for 8 minutes, until browned.

MONTE CRISTO SANDWICH



Ingredients:

4 Ounces Soft Cream Cheese
½ Cup Roasted Garlic
2 Tablespoons Fresh Chopped Parsley
6-8 Slices Rye Or Marble Bread
1 Pound Thin Sliced Rosemary Ham, Deli Style
5 Ounces Thin Sliced Swiss Cheese
Skewers
3 Large Eggs
3 Tablespoons 1% Milk
¼ Cup Garlic Olive Oil

Cooking Directions:

Blend together soft cream cheese, roasted garlic and fresh chopped parsley. Spread 1/5 of the mixture onto the first slice of rye or marble bread. Add 3 thin slices of deli style rosemary ham and 1 slice thin Swiss cheese. Top with another slice of bread and repeat layering with cream cheese mixture, ham, Swiss cheese and bread. Finish off the top with the last slice of bread. Use a skewer thru the top of the sandwich at each side. With a sharp serrated knife, cut crusts off the edges of the sandwich. Make 2 diagonal slices through the sandwich to create 4 equal triangles. For Club Style, blend together the eggs and milk. Dip each sandwich triangle into the egg mixture while still skewered, coat all sides well and place on a separate plate. Heat olive oil in a large pan or griddle over medium heat. Place all of the sandwich triangles in the griddle or frying pan and brown for approximately 2 minutes on each side. Serve hot and enjoy.

BEEF AND BISCUIT PIE




2 tbs butter or margarine
1 large onion, chopped
1 clove garlic, minced
2 cups fresh sliced mushrooms
1/4 tsp dried rosemary leaves, crushed
1/8 tsp pepper
One 14-3/4 oz can beef gravy
2-1/2 cups cubed cooked beef
1/4 cup water
1 cup pkg biscuit mix
1/3 cup milk
1/4 cup finely shredded carrot
1 tbs chopped fresh parsley

Preheat oven to 350F. In 10 inch skillet over medium heat, in hot butter, cook onion and garlic 2 minutes. Stir in mushrooms, rosemary and pepper, cook until vegetables are tender.

Stir in gravy, beef and water. Heat to boiling. Pour into 2 quart casserole. Meanwhile, in small bowl, stir together biscuit mix, milk, carrot and parsley. Drop by heaping tablespoon full around edge of casserole. Bake at 15 minutes or until dumplings are done.

Makes 4 servings.

MINI HOT BROWNS




The Mini Hot Browns are a smaller version of the famous Hot Brown sandwich. Guests quickly saddle up for juicy turkey slices and crispy bacon, piled on toasted rye bread and then topped with a rich cheese sauce

Ingredients

* 1 teaspoon chicken bouillon granules
* 1/4 cup boiling water
* 3 tablespoons butter
* 2 tablespoons all-purpose flour
* 3/4 cup half-and-half cream
* 1 cup (4 ounces) shredded Swiss cheese
* 18 slices snack rye bread
* 6 ounces sliced deli turkey
* 1 small onion, thinly sliced and separated into rings
* 5 bacon strips, cooked and crumbled
* 2 tablespoons minced fresh parsley

Directions

In a small bowl, dissolve bouillon in water; set aside. In a small saucepan, melt butter over medium heat. Stir in flour until smooth; stir in cream and bouillon. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in cheese until melted. Remove from the heat. Place bread slices on two baking sheets. Layer each with turkey, onion and cheese sauce. Sprinkle with bacon. Bake at 350° for 10-12 minutes or until heated through. Sprinkle with parsley. Yield: 1-1/2 dozen.

CUBAN SANDWICH




The Cuban sandwich is one of the staple foods of Cubans. Typically available in most Cuban food establishments, Cuban sandwiches consist of pork and ham, and Cuban bread. The sandwich is typically pressed using a sandwich press and served warm.

Serving Size: 4

Ingredients

1 loaf cuban bread*
1/2 lb baked ham (thinly sliced)
1/2 lb roast pork (thinly sliced)
1/2 lb swiss cheese (thinly sliced)
dill pickles (thinly sliced)
butter
yellow mustard
mayonnaise

* French bread may be substituted

Directions

Cut the bread open horizontally, and spread butter inside on top and bottom. Next, place the pickles along the bottom half, along with the pork. Spread some mustard on top of pork, then place the ham slices. You can spread some mayonnaise on top of the ham, this is optional. Place the slices of swiss cheese on top of ham. Cover the sandwich and cut into 4 pieces. Using a sandwich press, grill the sandwich 2 to 3 mins on each side. Make sure to compress the sandwich by pressing it initially to make it thinner than its original size. When done, the bread should be lightly toasted and cheese melted. Slice the sandwich in half diagonally, and enjoy!

RUM CAKE



Ingredients

1 18 oz package of yellow cake mix
4 whole eggs
2 tbsp grated lemon peel
1 3 oz package of Jello vanilla pudding filling
1/2 cup Bacardi dark rum
1/2 cup water
1/2 cup canola cooking oil


Glaze

4 oz butter
1 cup sugar
1/2 cup Bacardi rum
1/4 cup water
dusting powdered sugar


Directions

Preheat oven to 350 degrees. Prepare the cake mix, using a large bowl. Using an electric mixer, first whip the eggs, then add in the yellow cake mix, pudding filling, lemon peel, rum, water and oil. Mix well. Grease and flour the bundt pan, then pour mix into it. Use a 12 cup bundt circular pan. Bake for 1 hour, inserting a skewer in the cake to make sure it is baked thoroughly. Remove cake from oven and let cool.

Prepare the glaze by melting butter in a saucepan. Add the sugar, water, and rum and slowly bring to a boil. Then reduce to medium, and let cook for 10 mins. Let cool. Make holes in cake by pricking the top of the cake all over. Slowly pour the glaze all over the cake evenly and let sit for 1 hour to let cake absorb the glaze. Sprinkle powdered sugar on top of cake. Serve using serving plate and enjoy!

APPLE PIE



Ingredients:

4 medium apple(s), McIntosh, peeled and thinly sliced
3 Tbsp reduced-calorie margarine, chilled and cut up in small chunks
1 cup all-purpose flour
2 Tbsp water, or more if necessary
1/3 cup uncooked old fashioned oats
2 tsp sugar
1 Tbsp cornstarch
2 Tbsp reduced-calorie margarine, melted
5 Tbsp all-purpose flour
1/4 cup sugar
1/2 tsp ground cinnamon
2 Tbsp sugar

Directions:

Preheat oven to 400ºF. Start by making the crust. First, in a large mixing bowl or a food processor, combine 2 teaspoons of sugar and 1 cup of flour. Add 3 tablespoons of chilled, reduced calorie margarine and process until mixture looks crumbly, like coarse meal. If you don’t have a food processor, just use your fingers. Then start to mix in cold water, one tablespoon at a time, and mix well forming a dough. Using a rolling pin, flatten dough in a circle a bit larger than a9-inch pie pan. Press dough into the bottom and up the sides of the pie pan.

Next, make the filling. To do this, combine 1/4 cup of sugar, apples, cinnamon and cornstarch in a large bowl; add in the apple slices and toss to coat. Place mixture in prepared piecrust.

Finally, make the topping by mixing 2 tablespoons of sugar, melted margarine, 5 tablespoons of flour, 2 tablespoons of sugar and oats in a small bowl; scatter over apples.

Bake for about 45 to 50 minutes or until crumbly topping is golden brown in color and apples are tender. Cool for at least a half hour before serving. Serves 8.

APPLE BUTTER BREAD





Ingredients:

1/2 cup butter or margarine, softened
1 cup brown sugar, firmly packed
1 egg
3/4 cup buttermilk
2 teaspoons soda
2 cups flour
1 cup apple butter
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon all spice
1/2 teaspoon cloves
1/2 cup pecans

Cream butter and sugar. Add egg and beat well. Combine buttermilk and soda. Combine flour and spices. Add alternately with buttermilk beginning and ending with flour. Stir in apple butter and pecans. Pour into greased and floured 9 x 5 x 3 loaf pan. Bake at 350 degrees for 1 hr or until wooden pick inserted comes out clean. Cool in pan for 5 mins; remove to wire rack and cool completely.
